Document generation runs inside Salesforce as Apex batch + queueable jobs. The Lightning Web Component UI lives in your org. The only outbound traffic is what you explicitly enable — DocuSign or Adobe Sign dispatch — and that traffic goes directly from your org to your e-signature provider, on your contracts with them. No middleware between Salesforce and the providers.
